Fruit Jellies
  • Description:

    When it comes to quick and easy desserts, you could hardly ask for anything simpler or more hassle-free than this tropical fruit jelly. Ideal for an al fresco lunch, this refreshing and delectable dish will impress adults and is perfect for kids. Simply serve in glasses and top with the slightly sweetened cream - the textured jelly will be an affordable beaut. Serves: 4–6

  • Ingredients:

    1 packet (80 g) pineapple jelly
    125 ml boiling water

    1 can (410 g) can Rhodes Tropical Fruit Fiesta in light syrup

    250 ml cream
    2 tbsp. castor sugar

  • Method:

    1. Dissolve the jelly in the boiling water and set aside.
    2. Then, in a processor or with a stick blender, purée the Rhodes Tropical Fruit Fiesta with the syrup and stir into the jelly.
    3. Pour into glasses and allow to set in the fridge for 1–2 hours.
    4. Beat the cream and castor sugar until stiff peaks form.
    5. Spoon the cream onto each dessert and serve.

    Tips and variations:

    • Experiment with different fruit and taste combinations. Rhodes Peaches team well with orange jelly, Rhodes Pears with lemon jelly and Rhodes Pineapple Crush works well with pineapple jelly.
