Hope’s Chicken & Meat Marinades

You’ll never prepare your braai meat the same way again after tasting Chef Hope’s delicious marinade recipes! Perfect for your Heritage Day feast.

Directions

Beef Marinade:

1. In a bowl, mix all the ingredients for the marinade. Add your beef, then toss well in the marinade until everything is easily coated. Cover, then chill in the fridge for at least 5 hours, or overnight.

 

Chicken Marinade:

2. Mix all the spices in a bowl, then add oil and mix well again. Add your chicken to the marinade and ensure everything is well coated with the marinade. Cover and chill for at least 30 minutes before braaiing.

Ingredients

Beef Marinade (for 1kg of meat)

  • 45ml (3 tbsp.) Six Gun spice
  • 15ml (1 tbsp.) steak and chop spice
  • 5ml (1 tsp.) garlic and herb spice blend
  • 250ml (1 cup) BBQ sauce
  • 60ml (1/4 cup) Coca-Cola

 

Chicken Marinade (for 8 pieces)

  • 45ml (3 tbsp.) garlic and herb spice blend
  • 30ml (2 tbsp.) paprika
  • 15ml (1 tbsp.) cayenne pepper
  • Salt and pepper, to taste
  • 60ml (¼ cup) oil
