Directions

In a bag, coat the chicken with the flour.

Heat oil in a heat-proof pan/tray over medium heat. Add chicken to the hot pan skin side down and brown, turning for 5 minutes. Remove chicken from pan.​

Return pan to medium low heat, add sugar, water, vinegar, garlic and chillies, and cook stirring for 5 minutes or until sugar dissolves.​

Add the beans and return chicken to the pan. ​

Bake chicken for 15 minutes or until cooked. Serve with Ouma bread to mop up the beans.

  • 8 chicken drumsticks and thighs​
  • 45ml flour​
  • 30ml chicken spice​
  • 5ml paprika​
  • 30ml oil​
  • 250ml (1 cup) sugar​
  • 250ml (1 cup) water​
  • 125ml white wine vinegar​
  • 3 cloves garlic; chopped​
  • 15 long red chillies; finely chopped​
  • 2 tins baked beans​Ouma bread to serve
