  • Description:

    Make a filling family breakfast out of just a few pantry staples with this quick Baked Bean Breakfast! Grab your pantry staples and make this “shakshuka” with baked beans in under 30 minutes – plus, it’s great for feeding a crowd, without devouring your budget!

  • Ingredients:

    1 tin of baked beans
    1 tin chopped tomatoes or chakalaka
    1 onion, chopped
    4-6 eggs

    Butter or margarine
    Mushrooms (optional)
    Grated cheese (optional)

    Chilli flakes
    Salt & pepper
    Bread for serving

  • Method:

    Fry the chilli flakes, onion and mushrooms (if using) until transparent, then add your tomatoes and baked beans. Mix together and bring to a simmer. Once simmering, turn the heat down to medium-low and use a spoon to make a little space for each egg. Crack each egg into its little hollow, then sprinkle over the cheese (if using), add the lid onto your pan and cook for about 5 minutes.

    Once your eggs are cooked to your desired doneness, use a large spoon to scoop out the perfect serving of beans into a bowl, with the egg on top. Serve with toast and enjoy!
