    Tasty, colourful and healthy are words that spring to mind. The Chickpea and Bean Salad is the perfect side for a festive summer braai, and just as yummy as a meal on its own. Serves: 4 - 6

  • Ingredients:

    1 can black beans
    1 can chickpeas
    1 cup couscous, cooked
    1 cucumber, chopped
    1 cup cherry tomatoes, halved

    1 small red pepper, diced
    1 small yellow pepper, diced
    1 small red onion, finely chopped
    60ml olive oil
    30ml lemon juice

    5ml chopped garlic
    5ml Dijon mustard
    10ml honey
    Salt and pepper, to taste

  • Method:


    1. Combine honey, olive oil, lemon juice, garlic, Dijon mustard.
    2. Season with salt and pepper.


    1. Place couscous in a bowl.
    2. Pour over just enough hot water to cover couscous.
    3. Cover bowl with a lid or cling wrap and leave to stand for 5 to 10 minutes to absorb the liquid.
    4. Fluff with a fork and allow to cool.

    5. Drain and rinse the beans and chickpeas.
    6. Starting with couscous, combine all your salad ingredients, toss and drizzle with dressing.
