  • Ingredients:

    500 g macaroni pasta
    400 g can white/cannellini beans, rinsed and drained
    1 tbsp. cooking oil

    5 cloves garlic; finely chopped
    1 onion; finely chopped
    1 1/2 tsp. dried herbs
    1 chicken stock cube

    1/2 tsp. chilli flakes
    2 cups cheese; grated
    Salt and pepper

  • Method:

    Preheat oven to 200 ºC. Fill a big pot with water and bring to the boil. Add some salt, then add your pasta and cook your pasta for 2 minutes less than the package instructions. When your pasta is ready, set aside 1 cup of the pasta cooking water before draining the pasta. Dissolve stock cube in your pasta water, then add the dried herbs and chilli flakes, with seasoning to your taste. Crush (or blend) your beans, then mix with your cup of pasta water and set aside.
    In a pan on medium heat, cook your onion and garlic until soft, then add the bean mixture, bring to a boil and simmer for 5 minutes on low heat. Add 1 cup of your cheese and mix thoroughly, then add to an oven-proof baking dish.
    Pour pasta mixture into dish, flatten a little with your spoon, then sprinkle the rest of the cheese over the pasta. Place in oven until golden brown on top, about 5–10 minutes. Serve immediately.
