Pasta Salad

    Tired of your usual tuna? Try this fish pasta salad. It’s a wonderful, tasty meal and you can use your favourite type of fish - whether it’s flavourful yellowtail or delicate hake. You can make it for a healthy light lunch or dinner and it’s perfect as a packed meal for work or school too. The dish strikes a beautiful balance between the soft, lemon-infused fish, fresh basil and striking olive flavour. Feel free to add in some halved cherry or sliced Roma tomatoes to turn this into a Mediterranean-inspired salad.

  • Ingredients:

    Salt and freshly ground black pepper
    4 fish portions, cut into cubes
    8 olives
    15 ml lemon juice

    Juice and rind of 1 lemon
    Handful of fresh basil leaves, shredded

    15 ml olive oil
    250 g shell pasta, cooked and drained

  • Method:

    1. Preheat the oven to 230 °C.
    2. Season the fish with lemon juice, salt and pepper.
    3. Sprinkle with the olive oil and grill for 10 minutes or until done. Leave to cool.
    4. Mix the rest of the ingredients well, and stir the cooled fish lightly through the pasta. Serve.
