Spinach Salad

  • Ingredients:

    300 g fresh spinach, trimmed
    500 ml (2 cups) cooked couscous
    125 ml (½ cup) cherry tomatoes, quartered
    5 ml (1 tsp.) sugar

    Juice and grated rind of 1 lemon
    200 g feta cheese, crumbled
    2 eggs, hard-boiled
    1 small onion, finely chopped

    30 ml (2 tbsp.) olive oil
    Salt and freshly ground black pepper

  • Method:

    1. Shred the spinach and put it in a large bowl.
    2. Fluff up the cooked couscous with a fork and mix it with the spinach.
    3. Sprinkle the cherry tomato quarters with the sugar and a few drops of the lemon juice.
    4. Stir them into the spinach and couscous mixture.
    5. Add the crumbled feta cheese, roughly chopped eggs and onion, and mix.
    6. Drizzle the olive oil over the spinach salad and season with the remaining lemon juice, rind, salt and freshly ground black pepper to taste.
