Green Bean
and Potato Salad

    The combination of potatoes and green beans in this recipe quite simply taste like home. Although it can be served as a side to numerous main meals, it’s an ideal addition to the braai table. Everyone will find it hard to wait for the boerewors to be ready before they tuck into this satisfying salad side. Serves: 4 
Cooking time: 25 minutes

  • Ingredients:

    5 ml English mustard (optional)

    Salt and black pepper to taste
    100g McCain Green Beans

    100 g tangy mayonnaise

    1 tomato, chopped
    1 lemon, zested
    8 baby potatoes

    500 ml water
    30 ml chives

    50 ml water

  • Method:

    1. Quarter the baby potatoes, add to a large pot of salted water and bring to the boil.

    2. Once the potatoes are cooked through, remove from the water and allow to cool down.

    3. Blanch the McCain Green Beans and refresh in ice water.

    4. Mix the potatoes with the blanched green beans, mustard, mayonnaise and chives.

    5. Finish off with a little lemon zest and chopped tomato.
    6. Season with salt and black pepper.

    Serving suggestion: Serve as an accompaniment to a starter or main dish.
