    Easy on the pocket and always tasty on the table, there’s a reason so many people use potatoes when looking for a filling meal that provides value for money. Potato salad is without a doubt one of the most well-known and widely loved dishes, and this recipe will show you why. Prepare it as a side in summer, make it for your own braai or take it someone else’s – they’ll definitely thank you for it. Serves: 8

  • Ingredients:

    4 large potatoes
    ⅓ cup oil
    ¼ cup white vinegar
    1 tbsp. sugar
    1½ tsp. chilli powder

    1 tsp. salt
    ⅛ tsp. Tabasco sauce
    1 can (400 g) corn, water drained
    1 small carrot, grated

    1 cup green olives, pitted and sliced
    4 spring onions, sliced

  • Method:

    1. Cook potatoes in boiling water until tender.
    2. Drain and cool.
    3. Cut potatoes into cubes and place in a large bowl.
    4. Whisk together oil, vinegar, sugar, chilli powder, salt and Tabasco. Pour over potato cubes, tossing gently.
    5. Cover and chill for 1 hour.
    6. Remove from fridge and stir in corn, carrot, olives and spring onions.
    7. Stir gently and serve as a side dish to braai meats.
