    Love cooking short rib, but want to try something different? Now you can enjoy tender, fall-apart short ribs with all the added fun of making them in your kettle braai.

  • Ingredients:

    8 short ribs from the Shoprite Butcher’s Best range
    3 tbsp. salt

    2 tbsp. black pepper
    2 tbsp. white pepper

    1 tbsp. paprika
    2 tsp. garlic powder


  • Method:

    1. Mix your spice rub together in a small bowl, then rub all over your ribs. Set these aside while you get your kettle braai started.
    2. Prepare your braai by adding a large amount of unlit coals (enough for 4 hours of cooking – about ¾ of a 5kg bag) to the bottom of your kettle braai. In a separate fire-safe container, like a small braai or a fire-safe dish, light the leftover ¼ bag of briquettes. When they have turned grey, they are ready to add on top of the unlit coals in the kettle braai.
    3. The heat in your kettle braai should be cool enough for you to hold your hand over the coals for about 8 - 10 seconds. Place your ribs on the braai with the meat side facing up, then add your kettle braai lid and cook for 4 - 5 hours – try to avoid opening the lid more than once per hour.
    4. Your ribs are done when the meat is soft and tender, and the bone wiggles easily in the meat.
