Zanele’s Crispy Hasselback Potatoes

If you love crispy roast potatoes, look no further! These will make the perfect easy side dish for any Christmas lunch or dinner – or even for your next braai! Serve with a Crispy Roast Pork Belly  or even your Christmas Roast Beef .


1. Preheat your oven to 180ºC. Cut slits in the potatoes, leaving the bottom still intact.

2. In a bowl, mix garlic, thyme, bacon, butter, salt and pepper. 

3. Rub on potatoes and roast in oven for 30 minutes until crispy and golden – then serve with your choice of Christmas roast.

  • 8 large potatoes, parboiled until almost cooked
  • 4 gloves garlic, minced
  • Handful fresh thyme (or 2 tsp. dried thyme)
  • Handful cooked bacon
  • 100 g butter or olive oil
  • Salt and pepper
