Easy Stuffed Avocados

Description

This fresh and easy salad recipe is perfect for avocado season! Serve on its own for a healthy snack idea, as a quick side dish or even as a healthy starter idea.

Directions

1. Chop everything (except the avocado and lemon) finely, then season to taste with salt, pepper and a squeeze of lemon juice.

2. Add mayonnaise to your mix until it has your preferred consistency (more chunky or more creamy) and then scoop the mixture into your prepared avocado halves.

3. Serve immediately.

 

Chef’s tip: If you’re looking for another way to enjoy stuffed avocado, try adding canned tuna to the above recipe for extra protein.

  • 4 avocados, sliced in half, de-seeded and peeled
  • 1 lemon
  • ½ cucumber
  • 1 red or yellow pepper
  • 1 fresh chilli (optional)
  • ¼ red or white onion
  • 1–2 garlic cloves
  • 1–2 fresh tomatoes
  • 2–4 tbsp. mayonnaise of choice
  • Salt and pepper to taste
