Vegetable and Lentil Soup by Chef Zanele

Description
When it comes to healthy soups, look no further than this easy vegetarian soup recipe - packed full of lentils, spinach and sweetcorn.
Directions
1. In a pot, heat oil, fry onion, leeks, curry powder and spinach until fragrant.
2. Add lentils, sweetcorn and tomatoes. Pour in vegetable stock and let it cook for 15 - 20 minutes.
3. Add yoghurt and coriander, season to taste and serve immediately.

- 30 ml oil
- 1 brown onion; roughly chopped
- 1 cup leeks; roughly chopped
- 30 ml curry powder
- 250 g spinach; roughly shredded
- 240 g canned lentils
- 1 cup sweetcorn
- 410 g canned tomatoes
- 500 ml vegetable stock
- 250 ml plain yoghurt
- Handful fresh coriander; chopped
- Salt and pepper
