Description

Need something easy, delicious and filling? This Autumn soup recipe uses seasonal ingredients and comes together quickly – so you can spend more time with the family!

Directions

1. Fry onion and garlic on low heat until just soft, then add everything except the sausages.

2. Cook until pumpkin is cooked through, then mash the soup until fine and add sausage, cream and brown sugar.

3. Cook until sausage is just heated through and remove bay leaves before serving.

  • 2 cups pumpkin; peeled and chopped
  • 2 apples; peeled and chopped
  • 1 medium onion; chopped
  • 3 garlic cloves; chopped
  • 1 tsp. dried herbs
  • 2 bay leaves
  • ¼ tsp chilli flakes
  • 1 litre hot water
  • 2 chicken stock cubes
  • Salt & pepper to taste
  • 400g smoky Vienna sausages; chopped
  • ½ cup cream or full cream milk
  • 2 tbsp. brown sugar
