Zanele’s Mustard Mashed Potatoes

Nothing rounds out a fantastic Easter roast like a big bowl of hearty, creamy mashed potatoes! Zanele puts a zingy spin on this timeless classic by adding garlic and wholegrain mustard – a deliciously easy  side dish. 

Directions

1. Boil potatoes with garlic cloves in salted water until the potatoes are soft. When ready, drain excess water from the pot.

2. Add cream, butter and wholegrain mustard as you mash your potatoes. 

3. When soft and creamy, add in fresh parsley and season with salt and pepper to taste.

4. Serve immediately with your  roast.

  • 1 cup fresh cream (or full-cream milk)
  • 60 g butter (or high-quality margarine)
  • 3 tbsp. wholegrain mustard
  • Handful fresh parsley; finely chopped
  • Salt and pepper
