The methods involved in creating this London Dry gin are quite fascinating. It starts with a grain spirit re-distillation with juniper, cardamom and coriander. After that, three separate macerations, Seville lemon, bitter Seville orange, and sweet Valencia orange, are mixed. After a year of rest, the macerations are pooled and distilled, then blended with the first distillate, producing an exceptional gin.
