These grapes have been hand-selected from a number of wineries across the Western Cape. The vines were monitored to ensure optimal canopy ripening and physiological ripeness. To produce a smooth, delicate, fruit-forward wine style, the grapes were destemmed just after early morning picking, and fermentation was done "whole berry" following a 12-hour cold soak.
