Description

To capture the variety's delicate principal flavours, the grapes were selected in the early mornings of each of the four harvest days. To help quality selection when it came time to put together the final blend, each batch from each of the morning selections, as well as those from the other parcels, were stored separately in the basement. The Chardonnay is always bottled in the summer after filtration.
