Avocado Quesadillas

Description

When you’re only got 15 minutes to whip up a healthy lunch or after-school snack, these are a great go-to! Swap out ingredients as you need to for different variations on this school lunch idea.

Directions

1. Chop your onion, tomato and bell pepper finely, then place to one side.

2. Peel and mash your avocado, then add lemon juice, salt and pepper to taste. 

3. When all your ingredients are ready, add your wrap to a pan at medium heat.

4. Spread with mashed avocado, then sprinkle over your cheese, corn, tomato, onion and bell pepper as desired.

5. Season to taste.

6. Spread mayonnaise over a second wrap, then place mayonnaise-side down onto the other wrap, covering the toppings.

7. When the bottom wrap is lightly browned, flip the wrap carefully and lightly brown the other side.

8. Serve warm or cool according to preference.

  • 1 cup cheese, grated
