Description

This BBQ Mini Meatballs recipe is an easy school-night meal, and you can use any leftovers as lunchbox snacks.

Directions

FOR BBQ SAUCE

  1. Whisk or blend all the ingredients together until smooth.

 

FOR MEATBALLS

  1. In a large bowl, combine the breadcrumbs, eggs, and garlic.

  2. Add the beef and season with salt and pepper. Mix until well combined, then form into 1-inch meatballs.

  3. In a slow cooker, stir together the barbecue sauce and ¼ cup water. Add the meatballs. Cover and cook on low 4 hours.

 

Ingredients

For Meatballs

  • 1 cup breadcrumbs
  • 2 large eggs
  • 2 tbsp. garlic; minced
  • 1 kg lean ground beef
  • 1 x 500 ml barbecue sauce of your choice

 

For BBQ Sauce

  • ¾ cup tomato sauce
  • 2 tbsp. light brown sugar
  • 1 tbsp. white vinegar
  • 1 tbsp. Worcestershire sauce
  • 2 tbsp. paprika
  • ¼ - ½ tsp. cayenne pepper
