Beef Brisket Roast

Description

Slow roasted in a white wine, onion, garlic and rosemary sauce this slow roasted Beef Brisket recipe is what roasts are made of!

Directions

1.  Preheat oven to 200 °C

2.  Pat the beef dry, season with salt and pepper. 

3. Heat oil in an oven proof dish and brown beef on all sides. Transfer the beef to a plate.

4. Add the onions and sauté them. 

5. Add garlic, tomato paste, thyme, rosemary, salt and pepper. 

6.  Pour in the wine and beef stock then return beef into the mixture and cover. Let it bake in the oven for 2 ½ - 3 hours until tender/cooked.
 
 
Tip – Browning the beef helps to lock in all the juices so that the beef is moist.

  • 2 tablespoons vegetable oil
  • 3 - 4 onions; thinly sliced
  • 2 garlic cloves; minced
  • 1 tbsp. tomato paste
  • 1 tsp. fresh thyme
  • 1 tsp. rosemary
  • 1 cup dry white wine
  • 1 cup beef stock
  • Parsley for garnishing
