A delightful combination of flavours and textures. Our Carrot and Beetroot Salad recipe will quickly become a summer salad favourite!
Directions
1. In a pan, pour in the orange juice and sugar. Cook for 4 minutes until it reduces.
2. In a bowl, mix beetroot, carrot, feta cheese and sprinkle with finely chopped coriander.
Tip – After beetroot is cooked, run it down with water to avoid it from bleeding onto other ingredients.

- 2 tablespoons sugar
- 6 large carrots; cubed and cooked
- 6 cooked beetroot; peeled and diced
- Handful feta cheese
- Handful fresh coriander
