Chicken and Avocado Salad

1. For a dressing that’s light and tangy, mix all the ingredients together in a bowl and set aside.

2. To pack as much flavour into your chicken breasts as possible, first marinate them with a mixture of the chicken spice, garlic, lemon juice and cooking oil. Once you’ve coated them generously with the mixture, place them in an air fryer for 12 to 15 minutes. This way you’ll have all of the flavour and none of the fat.

3.Once the chicken has cooked through (but not overcooked), leave it to cool down for a few minutes, then cut it into strips for easy eating.

4. Use the avocado, cucumber, lettuce, green apple and onion to create a salad that’s full of summery crunch and freshness. Place all the ingredients into a large serving bowl, top with the delicious chicken breasts, then drizzle over a generous serving of the dressing you’ve already prepared. Quick, easy, and done before lights out!

  • 2 chicken breasts
  • 1 avocado, sliced
  • 250g lettuce
  • 1 green apple, sliced
  • 1 tbsp. chicken spice
  • 2 garlic cloves, minced
  • 2 tbsp. lemon juice
  • 1 tbsp. cooking oil
  • ½ cucumber, sliced
  • ½ red onion, sliced

 

Dressing

  • 2 garlic cloves, minced
  • 2 tbsp. olive oil
  • 2 tbsp. vinegar
  • 1 tbsp. honey
  • Salt and pepper
