Producing soft, fruity cinnamon buns with sweet, spicy swirls and a touch of cream cheese icing, this heavenly Hot Cross Bun recipe is the ultimate in Easter baking. Essentially a celebration of both cinnamon rolls and hot cross buns in one, it’s a moreish, memorable item that you can add to your Easter brunch table with confidence. 

Directions

1. Add yeast, flour, sugar, salt and spices to a bowl.

2. Heat your milk and butter in the microwave until just lukewarm.

3. Whisk eggs into the liquid, then add everything into the dry ingredients.

4. Add dried fruit and knead until the dough is smooth and elastic, about 10 minutes.

5. Roll the dough out on a floured surface to make a long, thin rectangle about 2 cm thick.

6. Spread with the softened butter, then sprinkle with sugar and cinnamon.

7. Starting with the long side closest to you, roll the dough into a log, then cut into 16 equal pieces.

8. Butter a large baking dish, then place rolls into the dish and cover with a tea towel.

9. Let them rise for 1 hour or until almost doubled in size.

10. Preheat your oven to 180 ºC then bake on the lowest rack for 30 minutes or until the tops are golden.

11. When cooled completely, whisk together the icing ingredients and either drizzle over top or create crosses on the buns.

  • 4 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp. instant yeast
  • 1 1/4 tsp. kosher salt
  • 1/8 tsp. allspice
  • 1/8 tsp. nutmeg
  • 1 cup whole milk
  • 4 tbsp. unsalted butter
  • 2 large eggs
  • 1 tbsp. finely grated orange zest
  • 1 cup raisins
     

For filling

  • ½ cup unsalted butter, softened
  • 2/3 cup packed brown sugar
  • 1 tbsp. ground cinnamon

For icing

  • 1 cup confectioners' sugar
  • 3–4 tbsp. milk
  • ½ tsp. pure vanilla extract
