Description

Try Hope's Fish Cakes recipe, made with hake and snoek fish, combined with mashed potatoes, herbs, and spices, then coated in crispy breadcrumbs.

Directions

Mix mashed potatoes, amasi, salt, pepper, herbs, and eggs in a mixing bowl.

Flake fish using a fork and add to potato mixture. Stir to mix well until blended.

Place breadcrumbs in a shallow bowl.

Roll fish mixture into golf size balls between your hands.

Dredge the fish ball in the breadcrumbs until well covered.

Arrange breaded fish balls on a board and slightly push down to form a patty shape.

Deep-fry fish cakes in preheated oil until golden brown or air fry for 15 minutes.

Serve fish cakes with green bean salad and a drizzle of 1000 Island dressing.

  • 1kg cooked hake and snoek fish, left overs
  • 500ml (2 cups) potato mash, cooled
  • 15ml (1 tbsp.) amasi or plain yoghurt
  • Salt and pepper
  • 10ml (1 tbsp.) dry mixed herbs
  • 2 eggs
  • 500ml (2 cups) breadcrumbs
  • Oil to deep fry (optional)
  • Green bean, pea, and bacon salad to serve
  • 1000 Island salad dressing
