Watermelon Salad

Description

What could be better than a cool watermelon salad in summer served up with feta, drizzled with balsamic vinegar and finely chopped mint for extra freshness?

Directions

1. Chop watermelon into cubes.

2. Add feta, chopped red onion and finely chopped mint.

3. Combine the olive oil and vinegar.

4. Arrange all the salad ingredients in a salad bowl.

5. Dress the salad just before serving.

Ingredients

  • 300 g watermelon; deseeded and cut into cubes
  • 1 cup feta cheese; crumbled
  • 1 medium red onion; finely chopped
  • Handful fresh mint; finely chopped
     

Dressing:

  • 30 ml olive oil
  • 30 ml balsamic vinegar
  • Salt and pepper
