Easy, delicious and vegan soup? Absolutely! This easy sweetcorn soup comes together as a 20-minute meal that’s suitable as an affordable vegan meal idea. 

Directions

In a pot, sauté onion, garlic, carrots, celery and bay leaves. Add corn kernels, stock, salt and pepper. Let the soup simmer for 12-15 minutes or until all the vegetables are cooked, adding more water or stock for desired consistency. Garnish with parsley before serving.

  • Water or more stock if needed
