Directions

Meringue:

Preheat your oven to 120°C. In an electric mixer, whisk 5 egg whites until they turn foamy. Add 1 cup of sugar and cornflour and continue mixing until the mixture becomes firm and glossy. Add vanilla essence and lemon juice, folding them into the mixture. Spread the meringue onto a baking tray lined with baking paper. Bake for 20 minutes, then lower the oven temperature to 100°C and bake for an additional 1.5 hours. Turn off the oven and let the meringue cool inside.

 

Berry Sauce:

In a pan, on low heat, combine frozen berries, sugar, lemon juice and water. Cook the sauce until it thickens, then allow it to cool.

 

Jelly:

Prepare the jelly by dissolving a box of strawberry jelly and gelatine powder in 1 cup of boiling water. Pour the mixture into ice trays and refrigerate for 1.5 to 2.5 hours, or until the jelly sets.

 

To serve:

Break meringue, jelly cubes, and fruits on a serving platter. Drizzle the sweet berry sauce over the top. For an extra touch of indulgence, serve with a scoop of vanilla ice cream.   • 5 egg whites
  • 1 cup (250ml) sugar
  • 1 tbsp. (15ml) cornflour
  • 1 tsp. (5ml) vanilla essence
  • 1 tbsp. (15ml) lemon juice
  • 2 – 3 sliced nectarines

 

Berry Sauce

  • 2 cups berries ​
  • 1 cup sugar ​
  • ½ cup lemon juice ​
  • ½ cup water​

 

Jelly

  • 1 box strawberry jelly ​
  • 1 cup boiling water ​
  • ½ cup cold water​
  • 1 tbsp. gelatine powder
