Directions

1. Grill the corn on the stovetop until it's cooked. Once it's cool, remove the kernels from the cob.

2. In a large salad bowl, combine lettuce or rocket, cucumber, grilled corn, cherry tomatoes and red onion.

3. In a separate bowl, mix together balsamic vinegar, Dijon mustard, and olive oil. Drizzle this dressing over the salad, and then crumble feta cheese on top before serving.

 

Tip: Repurpose any leftover salad by adding slices of roast chicken or beef to create another meal the next day.
