Directions

1. Line a large bowl with baking paper so that your cake doesn’t stick to the sides.

2. Next, layer the sides of the bowl with the hot cross buns, making sure to face the crosses outwards.

3. In a separate bowl, mix the vanilla ice cream, nuts and Easter eggs together until all the ingredients are evenly spread throughout.

4. Transfer the cake mixture to the bowl lined with hot cross buns, and finish off with the remaining hot cross bun tops (keep all the hot cross bun bottoms for breakfast or tea time later – they’re perfect with butter and cheese or jam).

5. Cover your ice cream cake with cling wrap and chill in the freezer overnight.

6. Take your cake out of the freezer just before serving, and place it on a large platter. Decorate it with your choice of melted Easter eggs and whole Easter eggs, and enjoy!

 

Ingredients

  • 12 hot cross buns; cut in half
  • 2L Spoonfulls Vanilla Ice Cream; slightly softened
  • 200g Padkos Nuts; chopped (pecan/mixed/roasted)
  • 6 Eggs Galore Pastel Hens Easter Eggs; crushed
