Zanele's Ice Cream Cake

Description

Treat yourself to Zanele's Ice Cream Cake, a delightful combination of hot cross buns, Spoonfuls vanilla ice cream, nuts, and Easter eggs.

Directions

1. Line a large bowl with baking paper or cling wrap so that your cake doesn’t stick to the sides.

2. Next, layer the sides of the bowl with the hot cross buns, making sure to face the crosses outwards.

3. In a separate bowl, mix the vanilla ice cream, nuts, deluxe fruit mix and Easter eggs together until all the ingredients are evenly spread throughout.

4.  Transfer the ice cream mixture to the bowl lined with hot cross buns and finish off with the remaining hot cross bun bottoms. Keep any hot cross bun tops and bottoms for breakfast or teatime later – they’re perfect with butter and cheese or jam).

5. Cover your ice cream cake with cling wrap and chill in the freezer overnight.

6. Take your cake out of the freezer just before serving and invert it on a large platter.

7.  Pour melted chocolate over the top of the cake and immediately decorate it with your choice of Easter eggs and whole Easter eggs and enjoy!

  • 12 hot cross buns, cut in half
  • 2L Spoonfuls Vanilla Ice Cream; slightly softened
  • 100g Padkos Nuts; chopped (pecan/mixed/roasted)
  • 100g Padkos Deluxe Fruit Mix, chopped
  • 200g milk chocolate, melted
  • 6 Eggs Galore Pastel Hens Easter Eggs; crushed
  • 6 Eggs Galore Hens Easter Eggs, crushed
