Directions

In a deep pot, warm the olive oil. Add the onion and garlic, and fry until golden brown. Add the celery, carrots, spinach, dry bay leaves, thyme, tomato paste and canned tomatoes. Mix together. Pour in vegetable stock. Let it cook for 10 –12 minutes, then add the pasta and let it cook until the pasta is soft. Season with salt and pepper to taste.

  • 3 celery sticks, chopped
  • 4 carrots, chopped
  • 2 cups spinach, chopped 
  • 2 dried bay leaves 
  • A handful fresh thyme
  • 30g tomato paste 
  • 1 tin canned tomatoes 
  • 750ml vegetable stock
  • 1 cup pasta
  • Salt and pepper
