Zanele’s Pap Tert

When it comes to braai side ideas, this modern-but-traditional favourite will be a hit amongst your Heritage Day braai guests. Creamy, hearty and packed with flavours, Zanele’s Pap Tert is guaranteed to have your guests asking for seconds!

Directions

1. Preheat oven to 180 ºC.

2. In a pot, bring water to a boil. Add peppers, spinach and bacon. Gradually add the maize meal, stirring constantly as it cooks and thickens. Pour in the cream, then lower the heat to medium. Keep stirring every 5 minutes for about 15 – 20 minutes, or until the pap is creamy and no longer tastes grainy.

3. When your pap is cooked, layer half of it into an oven dish and even out the surface with a big spoon. Place some tomato relish on top. Put the remaining pap mixture over and even out with your spoon again.

4. Sprinkle grated cheese liberally over the top of your tert, then place in the oven and bake until the cheese has melted and the top of your pap tert is golden and bubbly.

  • 2 cups maize meal
  • 1 tsp. salt
  • 5 – 6 cups water
  • 250 ml fresh cream
  • 1 cup bacon; chopped and fried
  • 1 red pepper; finely chopped
  • 250 g spinach; finely chopped
  • 2 cups grated cheese
  • 1 can of tomato relish
