Directions

Place the snoek inside a large piece of foil. Mix apricot jam, soy sauce, English mustard, fish spice, smoked paprika, garlic, lemon juice, salt, and pepper, and

marinate the snoek. Place the lemon slices on the snoek Wrap the ends of the foil together over the snoek so it is completely contained within. Cook the fish on the braai for 12 to 15 minutes, remove carefully from the foil, then serve and enjoy!

 

Relish method

Combine tomato, red onion, apricot, cucumber, and fresh coriander

Ingredients

 Snoek

  • 1 whole snoek
  • ½ cup apricot jam
  • 60ml soy sauce
  •  2 tbsp. English mustard
  • 1 tbsp. fish spice
  •  1 tsp. smoked paprika
  •  2 cloves garlic, crushed
  •  60ml lemon juice
  • Salt and pepper
  •  1 lemon, sliced

 

Apricot relish

  • 1 finely diced tomato, seeds removed
  • 1 small red onion, finely chopped
  • 1 cup, finely chopped apricots
  • ½ cucumber, seedless, finely chopped
  • 1 handful fresh coriander, finely chopped
