Zanele’s Tomato Soup and Toasted Cheese

How to make tomato soup – made even easier! Served with a scrumptious toasted cheese, this is a winter lunch idea that can come together in almost no time.
Directions
Melt the butter in a pan, then sauté onion and garlic until soft. Add oregano, tomatoes and vegetable stock, then season with salt and pepper. Let it simmer for 15-20 minutes, or until the tomato tastes well-cooked and sweet.
While the soup is cooking, make your toasted cheese. Spread margarine on both sides of the bread. Place cheese in the middle and make a sandwich, then add to a non-stick pan and toast the bread until the cheese melts and the outside is golden brown.
Using a hand blender, blend the soup into a smooth consistency, then pour in fresh cream and serve. If making a vegan tomato soup, leave out the fresh cream.

Tomato Soup
- 2 tablespoons butter
- 1 onion; finely chopped
- 4 garlic cloves; minced
- 1 tbsp. dried oregano
- 2 tins canned tomatoes or 1kg fresh tomatoes
- 500 ml vegetable stock
- 1 cup fresh cream
- Salt and pepper
Toasted Cheese
- Two slices bread
- 5 ml margarine
- 2 slices cheddar cheese
