Zanele’s Beef Rib-Eye

Description

This hearty, bone-in Beef Rib-Eye Roast is the ultimate Easter roast recipe! Serve with Crispy Hasselback Potatoes and Butternut Lentil Salad.

Directions

1. Preheat your oven to 200 ºC. In a deep casserole pot, heat the oil and sauté onion, garlic and rosemary.

2. Add the rib eye and brown the meat all over.

3. Pour in the beef stock, wine and tomatoes, then season with salt and pepper. 

4. Roast uncovered in the oven for 90 minutes, then add in the carrots and roast for another 15 minutes.

 

Rib-Eye Tip


When you sear the meat, don’t use too much oil. This will ensure that the juices get locked inside.

  • 4 large carrots; roughly chopped
  • 1 large onion; roughly chopped
  • 1 sprig of rosemary
  • 2 cups beef stock
  • 1 cup red wine
  • 2 cans of chopped tomatoes
  • 3 tbsp. olive oil
  • Salt and pepper, to taste
